Roasted Red Capsicum and Cheese Tava Sandwich

Ingredients :
8 bread slices
1 red medium capsicum
5 tbsp cheese cubes
2 tsp roughly chopped garlic (lehsun)
1/2 tbsp mayonnaise
salt and freshly ground black pepper (kalimirch) to taste
2 tsp butter for brushing
2 tsp butter for cooking
Method :
Pierce a fork through the capsicum and roast it on a medium flame till it turns black from all the sides.
Wash and remove its skin, stem and seeds and roughly chop it.
Combine the roasted capsicum, cheese, garlic, mayonnaise, salt and black pepper in a mixer and blend till coarse.
Place a bread slice on a clean, dry surface and spread ¼ th of the capsicum-cheese mixture evenly over it.
Sandwich it using another bread slice and brush ½ tsp of butter evenly over it.
Heat a non-stick a tava (griddle), put ½ tsp of butter and place the sandwich on it with the buttered side facing upwards and cook on a medium flame till it turns golden brown in color from both the sides.

1/4 tsp turmeric powder (haldi)
salt to taste
water as required to make a thick batter
oil for cooking chillas
For Stuffing

Guava Spritzer

Combine 1 cup of water with the sugar in a broad pan and cook on a medium flame till the sugar dissolves, while stirring twice in between.Add the guava and cook on a medium flame till the guavas are tender. Keep aside to cool.Blend in a mixer to a smooth purée and strain using a strainer.Add the ginger juice and lemon juice and mix well.In each pilsner glass, place 2 ice-cubes and pour equal quantity of the juice. Drop 1 slice of guava and top it with a bottle of soda.

Peach Cooler

Chandan Ice Tea

2 tbsp lemon juice
240 ml sandalwood (chandan) syrup

Method :
Prepare tea by pouring hot water in a jug with 3 tea bags. Let it brew for 5 minutes (10 minutes if you want it strong).Make sure the tea bags are completely submerged in the water.Remove tea bags from the jug, add sugar and mix well. Keep it in the refrigerator chill for 1 hour.Remove the jug from the refrigerator add lemon juice to the tea, mix well.Put 4 ice cubes in a tall glass.Pour 60 ml. of chandan syrup over it.Then pour the chilled ice tea over it and stir to mix well.Repeat steps 5 to 7 to make 3 more glasses of chandan ice tea.

Special Lassi

Ingredients :
2 1/2 cups fresh curds (dahi)
1/2 cup chopped mint leaves (phudina) leaves
1/4 cup chopped coriander (dhania)
chopped ginger (adrak)
1 slit green chilli , finely chopped
1/2 small raw mango , sliced
salt to taste
black salt (sanchal) to taste
1 tsp roasted cumin seeds (jeera) powder
ice cubes as required
Method :
Combine the mint leaves, coriander leaves, ginger, green chillies, raw mango, salt, black salt and roasted cumin powder and blend in a mixer, adding a little water to a fine paste.Add the curds,1 cup of water and ice cubes and blend again. Pour into individual serving glasses and serve chilled.
