Guava Spritzer

Ingredients :

1/4 cup sugar
1 1/2 cups pink guava , cut into 25 mm. (1”) cubes
1 tbsp ginger (adrak) juice
1/2 tbsp lemon juice
4 bottles chilled soda
8 ice-cubes

For The Garnish
4 slices pink guava

Method :

Combine 1 cup of water with the sugar in a broad pan and cook on a medium flame till the sugar dissolves, while stirring twice in between.Add the guava and cook on a medium flame till the guavas are tender. Keep aside to cool.Blend in a mixer to a smooth purée and strain using a strainer.Add the ginger juice and lemon juice and mix well.In each pilsner glass, place 2 ice-cubes and pour equal quantity of the juice. Drop 1 slice of guava and top it with a bottle of soda.
Serve immediately.

Method :

Combine the watermelon, strawberries, lemon juice, sugar syrup and ½ cup of water and blend in a mixer till smooth.In each cocktail glass place ¼ cup of crushed ice and pour equal quantity of the juice.
Serve immediately garnished with a wedge of watermelon on each glass.

Method :

Boil 4½ cups of water in a deep pan, add all the ingredients except honey, mix well and simmer for 3 to 4 minutes.Strain and pour into 4 individual cups.Add 1½ tsp honey in each cup, mix well and serve immediately.

Mangolicious

1 ripe mango
1 raw mango
500 ml milk
4 to 5 tbsp honey
1 bar dark chocolate
a few mint leaves (phudina)
4 chocolate wafer roll

Method :

Peel the ripe mango and cut it into cubes.Combine the ripe mango , milk, honey and a few ice cubes together and blend in a mixer.Peel the raw mango and grate it.Grate the dark chocolate also.Take four tall glasses and put the grated dark chocolate and then put a little grated raw mango on top of the dark chocolate.Pour the milk and mango mixture into the glasses.(Don't pour it till the rim of the glasses )For garnishing, put some grated dark chocolate with a little bit of grated raw mango and finish it off with small cubes of ripe mango and a mint leaf on top.
Finally stick a wafer roll on top and serve.

Apricpot Yogurt Parfait

Ingredients :

800 gms plain curds (dahi)
1 cup powdered sugar
a pinch of nutmeg (jaiphal) powder
250gms sundried apricot
1 cup warm milk
10 to 12 dry roasted cashew nuts
toasted walnuts (akhrot) for serving

Method :

Hang the curds in a muslin cloth in a cool place for approx.3 to 4 hours until all the liquid (whey) has drained off, preferably overnight in the refrigerator.Soak the apricots in warm milk and keep aside.Toast the cashew nuts and grind along with the sugar to a fine powder.Puree the apricots and pass through a sieve to have a smooth puree.Combine the hung curds, powdered sugar, cashew nuts and nutmeg powder in a mixer jar and blend till it smooth and creamy.Pour this mixture into small glass upto half of the glass.Pour in the Apricot puree. Refrigerate, uncovered, till the time of service.
Serve topped with chopped apricots and toasted walnuts.

Papaya Mango Smoothie

Fresh Lemon Juice with Herbs

Add the lemon juice, sugar, salt, cardamom powder and basil in chilled water and mix well.Keep aside for half an hour in refrigerator.
Strain and serve chilled garnished with fresh lemon slices.

Rub the rim of 4 glasses with honey and dip in castor sugar. Keep aside till required.Heat the milk , do not bring to a boil.Add grated white chocolate and stir till chocolate melts well. Kiwi ka Jaljeera Paani

Roast kiwi in an oven or grill till they are soft.Cool ,peel off skin and make a pulp by hand.Wash mint leaves and coriander,peel ginger.Grind mint,coriander,jaljeera powder,ginger to a smooth paste.Blend kiwi pulp with sugar,black salt and lemon juice.Stir in mint,coriander paste and strain.Add water as required and serve chilled garnished with 1 tbsp of boondi in each glass.

Organic Pineapple Tulsi Drink

Method :

Combine the guava and ¾ cup of water in a mixer and blend till smooth.

How to proceed

Just before serving, put 2 tbsp of the prepared guava mixture in a tall glass and pour ½ cup of sprite over it and mix well.

Peach Cooler

Chandan Ice Tea

3 to 4 tea bags (can opt for green tea)
2 tbsp lemon juice
240 ml sandalwood (chandan) syrup

Method :

Prepare tea by pouring hot water in a jug with 3 tea bags. Let it brew for 5 minutes (10 minutes if you want it strong).Make sure the tea bags are completely submerged in the water.Remove tea bags from the jug, add sugar and mix well. Keep it in the refrigerator chill for 1 hour.Remove the jug from the refrigerator add lemon juice to the tea, mix well.Put 4 ice cubes in a tall glass.Pour 60 ml. of chandan syrup over it.Then pour the chilled ice tea over it and stir to mix well.Repeat steps 5 to 7 to make 3 more glasses of chandan ice tea.

Method :

Combine the sugar and water in a deep steel vessel, mix well and cook on a medium flame for 8 minute, while stirring occasionally. Keep aside.
Combine the alphonso mangoes, raw mangoes and 1 cup water in a pressure cooker and cook on a medium flame for 12 minutes without the whistle.
Let it cool and blend thoroughly.

Method :

Combine the lemon grass, mint leaves and sugar with 2 cups of water in a pan and bring it to a boil. Remove from the fire, allow to cool and purée using a hand blender. Add the lemon juice and mix well. Strain through a muslin cloth to get an infusion. In each serving glass, put 2 to 3 ice-cubes and pour ¼ cup of the infusion. Top with the lemonade and garnish with mint leaves and a lemon slice. Repeat for the remaining infusion and lemonade to make 4 more glasses.
Serve immediately.

For the herbal paste: Grind the mint leaves, tulsi leaves, cumin seeds and ani seeds using minimum quantity of water to make a paste. mix with the raw mango pulp and herbal paste and heat without letting it come to boil. cover and keep aside to cool. Melon and Mango Smoothie
