Italian Baked Chicken

Ingredients
  • 2 breasts of chicken
  • 2 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes
  • 1 cup mushrooms, diced
  • 8-10 black olives
  • Few sprigs of fresh basil leaves
  • 8-10 green olives
  • 1 tsp red wine vinegar
  • 1 cup cubed bacon
  • 8-10 garlic cloves
  • 1 tsp dried oregano
  • 1 cube of parmesan cheese
  • Salt and pepper to taste
Method
  1. Place the black and green olives on a tray.
  2. Add the garlic cloves, cherry tomatoes, diced mushrooms and cubed bacon.
  3. Add the dried oregano and 1 tbsp of olive oil.
  4. With your hands, mix the ingredients well.
  5. Bake the vegetables in a pre-heated oven at 200 degrees for 20 minutes.
  6. As the vegetables get baked in the oven, marinate the chicken.
  7. Drop 1 tbsp of olive oil on a plate.
  8. Add some crushed pepper and salt as per taste.
  9. With your hands, spread the oil evenly on the surface of the plate.
  10. Marinate the chicken breasts properly in oil, salt and pepper.
  11. Allow the chicken to rest for 10-15 minutes.
  12. Once the vegetables are nicely roasted, season them with salt and pepper.
  13. Place the chicken breasts on the heap of roasted vegetables carefully and sprinkle some red wine vinegar.
  14. Sprinkle some olive oil and a few sprigs of basil.
  15. Cook the chicken and vegetables in the an oven for 15 minutes till the chicken breasts are cooked well.
  16. Garnish with grated parmesan cheese and basil leaves and serve.
