Classic Chicken
Ingredients
- 1 tsp turmeric powder
- 1 tbsp dhaniya powder (coriander powder)
- 1 tbsp red chili powder
- 1 tbsp ginger-garlic paste
- ½ tsp garam masala powder
- Salt to taste
- 1 cup curd
- Curry leaves
- ½ kg boneless chicken
- Oil for frying.
Method
- Marinate the chicken pieces with all the spices mentioned above except curry leaves. Leave the chicken to marinate for at least two hours.
- Heat the oil for deep frying. Make sure the oil is very hot so that you are able to seal the juices and retain the moisture within the chicken.
- Now slowly, piece by piece add the marinated chicken pieces in the hot oil.
- The main flavoring comes from the curry leaves and the process to add them is while frying.
- So while your chicken pieces are being fried add the curry leaves in the oil.
- Cook on a high flame. It will take around 6 minutes to cook. You can use an oil dripper stand to strain the excess oil.
