Ingredients
- 3 tablespoons olive oil
- ½ onion, finely chopped
- 6 cloves garlic, coarsely ground
- 2 teaspoons coriander powder
- 2 teaspoons cumin powder
- 1 teaspoon chilli powder
- 1 teaspoon garam masala
- 1 tomato, cut into wedges and pan-roasted
- Salt to taste
- 200 gms chicken breasts, cut into 2 inch pieces
- 2 to 3 peaches, cut into wedges
- ½ cup heavy cream
- Heat oil in a pan on medium high heat. Add onion, garlic, coriander powder, cumin powder, chilli powder and garam masala. Sauté till fragrant.
- Add the pan-roasted tomato wedges, salt, chicken breasts and peaches. Mix well.
- Add 1 cup water and bring to a boil on high heat. As it starts boiling, reduce the heat to low. Cover and let it simmer for 10 to 15 minutes, or till chicken is cooked through.
- Add cream and mix gently, but thoroughly.
- Serve hot with rotis or plain steamed rice.
