Peach-pan Roasted Tomato Checken Curry

Ingredients
  • 3 tablespoons olive oil
  • ½ onion, finely chopped
  • 6 cloves garlic, coarsely ground
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • 1 teaspoon chilli powder
  • 1 teaspoon garam masala
  • 1 tomato, cut into wedges and pan-roasted
  • Salt to taste
  • 200 gms chicken breasts, cut into 2 inch pieces
  • 2 to 3 peaches, cut into wedges
  • ½ cup heavy cream
Method
  1. Heat oil in a pan on medium high heat. Add onion, garlic, coriander powder, cumin powder, chilli powder and garam masala. Sauté till fragrant.
  2. Add the pan-roasted tomato wedges, salt, chicken breasts and peaches. Mix well.
  3. Add 1 cup water and bring to a boil on high heat. As it starts boiling, reduce the heat to low. Cover and let it simmer for 10 to 15 minutes, or till chicken is cooked through.
  4. Add cream and mix gently, but thoroughly.
  5. Serve hot with rotis or plain steamed rice.
