Raiwala Mirchi

Ingredients

1/2 kg thick green chillies (bhavnagari I331)
3/4 cup black salt (sanchal)
3/4 cup mustard (rai / sarson) powder
1/2 tsp asafoetida (hing)
1 tsp turmeric powder (haldi)
2 tbsp lemon juice
2 tbsp oil

Method

Wash and dry the chillies thoroughly.Remove the tops and slit each chilli lenghtwise. Tap to remove any excess seeds.Mix together the black salt, mustard powder, asafoetid, turmeric powder and oil.Fill this mixture into the chillies and place them in a sterilised bottle. Top with any remaioning mixture.Add the lemon juice and shake the bottle well.Store for at least 1 day before serving.

Easy Dal Dhokli

Servings: Makes 4 servings

Ingredients

For The Dhokli
1 1/2 cups whole wheat flour (gehun ka atta)
1/2 cup besan (bengal gram flour)
salt to taste
1 tbsp coriander-cumin seeds (dhania-jeera) powder
a pinch of asafoetida
2 tbsp oil
1/2 tsp chilli powder

For The Dal
2 cups cooked and mashed toovar (arhar) dal
3/4 cup chopped tomatoes
1/2 cup boiled peanuts
1 tsp chopped ginger (adrak)
2 to 3 slit green chillies
a few curry leaves (kadi patta)
1 tbsp jaggery (gur)
1 tbsp tamarind (imli) pulp
1 tsp chilli powder
1 tsp garam masala
1 tbsp chopped coriander (dhania)
salt to taste

For The Tempering
2 tbsp oil
1 tsp cumin seeds (jeera)
1/4 tsp asafoetida (hing)
1/4 tsp turmeric powder (haldi)

Method

For the dhokli
For the dhokliCombine all the ingredients in a bowl, mix well and knead into a soft dough, using enough water.Cover and keep aside for 15-20 minutes.Divide the dough into equal portions and roll out each portion into 6\" diameter circles.Heat a tava and cook each roti lightly from both the sides.Cut each roti into diamond or desired shapes and keep aside.
For the dal
For the dalHeat the oil in a kadhai and add the cumin seeds.When the seeds crackle, add the asafoetida, turmeric powder, red chilli powder and the cooked dal, mix well and bring the dal to boil.Add enough water, salt, ginger, green chillies and rajwadi masala and mix well.Add the curry leaves, tomatoes, jaggery, tamarind and groundnuts and simmer for 10-15 minutes.
How to proceed
How to proceedJust before serving, add the dhoklis to the dal and bring the dal to boil.Serve hot garnished with coriander.

Pudina Pulao

Ingredients

2 cups rice (chawal)
2 cups mint leaves (phudina)
1/4 cup curds (dahi)
2 ginger (adrak)
3 red chillies
1/2 cup grated coconut
10 black peppercorns (kalimirch)
salt to taste
2 tbsp ghee
2 tsp peanuts
1 tsp chana dal (split bengal gram)
5 curry leaves (kadi patta)
1 tsp mustard seeds ( rai / sarson)
3 cloves (laung / lavang)
2 cardamoms
1 tsp cumin seeds (jeera)
2 tsp lemon juice

Method

Cook the rice in 4 cups of water in a pressure cooker and keep aside.Grind mint leaves, ginger, red chillies, peppercorns, coconut, curds and salt to a smooth paste.Heat the ghee in a deep vessel, add peanuts and roast for few seconds.Add the chana dal, curry leaves, mustard seeds, cumin seeds, cardamom and cloves.When mustard seeds stop spluttering, add the prepared mint paste and stir fry for few seconds.Now add the cooked rice and mix thoroughly.Cover and cooked for 2-3 minutes and stir in lemon juice, mix well.Serve hot with any raita of your choice.

Quick Cottage Cheese Bites

Ingredients

For The Batter
2 tbsp plain flour (maida)
1/2 tbsp crushed garlic (lehsun)
1/3 cup water (approx)
1/8 tsp red colour
salt to taste

For The Coating
1/3 cup bread crumbs
1 tbsp sesame seeds (til)
1 tsp semolina (rava)
200 gms paneer (cottage cheese)
1 tsp chaat masala
oil for deep frying

For Serving
tomato ketchup

For the BatterCombine all the ingredients in a deep bowl, mix well and keep aside.
For the Coating
For the CoatingCombine all the ingredients in a flat plate, mix well and keep aside.

How to ProceedCut the paneer into 1/4 inch thick , triangular pieces. Spread little chaat masala, mix well.Dip the paneer pieces in the batter.Remove from batter and toss in the coating mixture and coat the paneer pieces from all the side.Heat the oil in kadhai and deep-fry the paneer pieces, one at a time and fry till it turnss to golden brown and crisp.Drain on paper napkins to absorb excess oil.Repeat the same process for the remaining ingredients.Serve hot with tomato ketchup.

1 cup semolina (rava)
1/4 cup curds (dahi)
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
2 tbsp grated carrot
1 slit green chilli , chopped
2 tbsp chopped coriander (dhania)
salt to taste
2 pinch freshly ground black pepper powder
oil for cooking

Method

Combine all the ingredients in a bowl and mix well.Heat the appa vessel and grease each mould with oil.Pour a spoonfull of mixture in each of the moulds.Cover the vessel with a plate and cook on a medium flame from both the sides till brown and crsip.Serve hot with coconut or mint chutney.

Mooli Salad

1 cup grated radish (mooli)
1/4 cup finely chopped radish leaves (mooli ke patte)
1/4 cup finely chopped onions
1/4 cup pomegranate (anar)
1 tbsp olive oil
1 tsp cumin seeds (jeera) powder
salt to taste
1 tbsp chopped coriander (dhania)

For The Garnish
2 tbsp chopped walnuts (akhrot)

Method

Combine all the salad ingredients, stir lightly and serve fresh.Garnish with walnuts and serve with soups.

Ingredients

4 cups milk
sugar to taste
1 cup milk powder
1 egg
1/4 tsp baking powder
1 tsp chopped pistachios

Method

Mix milk powder and baking powder well.Beat the egg.Add this beaten egg to the milk powder mix little by little and make small balls of that.Boil 4 cups milk with required sugar.Put the balls and boil it again till the balls became almost double it''s size.Decorate with chopped pista.

2 tbsp chopped coriander (dhania)
lemon juice

Method

Combine all the ingredients in a bowl and mix well.Sprinkle some lime juice.Serve immediately.
