To Be Mixed Into A Cottage Cheese Stuffing
- 3/4 cup grated low fat paneer (cottage cheese)
- 2 tbsp chopped coriander (dhania)
- 1/2 tsp finely chopped green chillies
- salt to taste
- 12 mm (1/2") piece of ginger (adrak)
- 4 garlic (lehsun) cloves
- 250 gms ladies finger (bhindi)
- 2 large tomatoes
- 1 tbsp oil
- 1 onion grated
- 1/2 tsp chilli powder
- 1/4 tsp garam masala
- salt to taste
- 2 tbsp chopped coriander (dhania)
- Wash, dry and slit the ladies fingers lengthwise. Keep aside.
- Stuff the ladies fingers with the cottage cheese stuffing and keep aside.
- Put the tomatoes in a vesselful of boiling water for 10 minutes. Peel and chop finely. Keep aside.
- Heat 2 tsp of oil in a non-stick kadhai, add the ladies fingers and cook until slightly soft. Remove the ladies fingers and keep aside.
- Add the remaining 1 tsp oil in the same kadhai and saute the onions on a medium flame till they turn golden brown in colour.
- Add the prepared ginger-garlic paste and chilli powder mixed with 1 tbsp of water and saute for a few minutes.
- Add the tomatoes, garam masala and salt and cook on amedium flame for a few minutes, while stirring once in between.
- Sprinkle a little water and add the sautéed ladies finger and cook again for a few minutes.
- Serve hot garnished with coriander.
