Makai Churi Roti

Ingredients
  • Cornmeal 2 cups
  • Ghee 3 tablespoons
  • Cashewnuts,chopped 1 tablespoon
  • Raisins 1 tablespoon
  • Jaggery (gur),grated 1/2 cup
  • Fennel seed (saunf) powder 1/2 teaspoon
Method
  1. Heat a non-stick tawa.
  2. Put the cornmeal in a bowl, add lukewarm water and knead. 
  3. Put portions of the dough on a plastic sheet and roll into a thick roti. 
  4. Cook the roti on the tawa on low heat. 
  5. Heat a little ghee in a non-stick pan, add cashewnuts and sauté till lightly browned. 
  6. Add raisins, take the pan off the heat and mix well. 
  7. Drizzle a little ghee on the roti and cook, turning sides, till it is evenly cooked on both sides. 
  8. Put the rotis in a bowl. 
  9. Add jaggery and 2 tbsps ghee and crush the rotis. 
  10. Add fennel powder and the sautéed cashewnuts and raisins and mix well. 
  11. Serve hot.
