Classic Chicken

Ingredients
  • 1 tsp turmeric powder
  • 1 tbsp dhaniya powder (coriander powder)
  • 1 tbsp red chili powder
  • 1 tbsp ginger-garlic paste
  • ½ tsp garam masala powder
  • Salt to taste
  • 1 cup curd
  • Curry leaves
  • ½ kg boneless chicken
  • Oil for frying.
Method
  1. Marinate the chicken pieces with all the spices mentioned above except curry leaves. Leave the chicken to marinate for at least two hours.
  2. Heat the oil for deep frying. Make sure the oil is very hot so that you are able to seal the juices and retain the moisture within the chicken.
  3. Now slowly, piece by piece add the marinated chicken pieces in the hot oil.
  4. The main flavoring comes from the curry leaves and the process to add them is while frying.
  5. So while your chicken pieces are being fried add the curry leaves in the oil.
  6. Cook on a high flame. It will take around 6 minutes to cook. You can use an oil dripper stand to strain the excess oil.
