Sooji Waffles

Preparation Time: 15 minutes.
Cooking Time: 20 to 30 minutes.
Serves 4.
Ingredients
  • 1 cup semolina
  • 3/4 cup plain flour (maida)
  • 5 tbsp curds (dahi)
  • 1 tsp levelled, baking powder
  • 2 tbsp chopped coriander (dhania)
  • 1/2 cup chopped cabbage
  • 2 tbsp cooked corn (makai ke dane) (optional)
  • a pinch asafoetida (hing)
  • 1 tbsp oil
  • 4 to 6 green chillies, chopped
  • a pinch of sugar (optional)
To serve
  • Grated processed cheese
Method
  1. Sieve the sooji and plain flour.
  2. Add the curds, 2 to 3 tablespoons of warm water and the baking powder and mix into a batter. Keep aside.
  3. After about 2 hours, add the remaining ingredients.
  4. Pre-heat the closed waffle iron until the signal light goes off. Open the iron, evenly pour 3/4 cup of the mixture in the centre of the iron and close the lid. Bake until the signal light goes off.
  5. Repeat with the rest of the batter.
  6. Serve hot with butter and grated cheese.
