Ingredients
For The Waffle Batter
- 1 cup rice (chawal) soaked and ground
- 1/2 cup maize flour (makai ka atta)
- 2 tbsp sweet corn kernels (makai ke dane) parboiled and coarsely crushed
- 2 tbsp finely chopped sweetened pineapple
- 1/4 cup grated paneer (cottage cheese)
- 1/2 cup or more semi thick buttermilk
- 1 tbsp finely chopped coriander (dhania)
- salt to taste
- freshly ground black pepper (kalimirch) powder to taste
- 1/2 tsp nutmeg (jaiphal) powder
- 1/2 tsp baking powder
- 1 tbsp olive oil
- white butter
- fresh mint leaves (phudina)
- fresh strawberry
- apricot jam
- hot gingered coffee
- Combine all the ingredients for waffle in a deep bowl and keep aside for at least 1/2 hour. The batter should be thick and smooth.
- Heat the waffle iron and grease it with olive oil.
- Divide the batter into 5 equal portions, pour a portion of the batter in the pre-heated waffle iron and bake until light brown and crisp.
- The waffle will get crisper on cooling.
- Garnish with white butter, green mint and strawberries.
- Serve it fresh with jam and coffee.
