Brinjal Dal

Preparation Time: 10 mins
Cooking Time: 15 mins
Makes 4 to 6 servings
Ingredients
  • 1 cup cooked vaal (field beans/ butter beans)
  • 1/2 cup chopped brinjal (baingan / eggplant)
  • 1 tbsp ghee
  • 1 tsp mustard seeds ( rai / sarson)
  • 1 tsp cumin seeds (jeera)
  • 1 tsp asafoetida (hing)
  • salt to taste
  • 1 tsp coriander (dhania) seeds powder
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder (haldi)
  • 1 tsp grated jaggery (gur)
  • 2 kokam
  • 1 tsp chopped green chillies
  • 1 tsp grated ginger (adrak)
  • a few curry leaves (kadi patta)
  • 1/4 cup chopped coriander (dhania)
Method
  1. Heat the ghee in a kadhai and add the mustard seeds and cumin seeds.
  2. When the seeds crackle, add the asafoetida and curry leaves and saute for 10 seconds.
  3. Add the brinjal and saute for few minutes.
  4. Add the mashed dal, 2 cups water and the remaining ingredients, mix well and boil for atleast 10 minutes.
  5. Serve hot garnished with coriander.
  6. Serve hot with rice, papap and pickle.
