Rose Coconut Cooler

Ingredients
  • Rose syrup 6 teaspoons
  • Tender coconut water,chilled 1 cup
  • Fresh mint leaves 12-15
  • Lemons,cut into small cubes 2
  • Salt to taste
  • Tender coconut flesh (malai) for garnish
  • Drinking soda as required
Method

  1. Combine mint leaves, lemon cubes and a little coconut water in a Boston shaker. 
  2. Muddle all the ingredients with a muddler. 
  3. Add rose syrup and remaining coconut water, cover and shake well.
  4. Rim individual glasses with salt and pour the prepared drink into them. 
  5. Cut coconut flesh into triangles, make a little slit on one side and fix one triangle on the rim of each glass. 
  6. Top the drink with soda and serve chilled.
