Paushtik Roti

Ingredients
  • Whole wheat flour (atta) 2 cups + for dusting
  • Red pumpkin (bhopla/kaddu),peeled and grated 100 grams
  • Spinach,blanched and chopped 1 bunch
  • Green chillies,finely chopped 2-3
  • Carom seeds (ajwain) 1 teaspoon
  • Chaat masala 1 teaspoon
  • Red chilli powder 1/2 teaspoon
  • Salt to taste
  • Oil For shallow frying
Method
  1. Place whole wheat flour in a bowl, add pumpkin, spinach, green chillies, carom seeds, chaat masala, red chilli powder, salt and mix well. 
  2. Add sufficient water and knead to stiff dough. 
  3. Cover with a muslin cloth and set aside for ten to fifteen minutes.
  4. Divide the dough into eight equal portions and shape into balls. 
  5. Dust them with flour and roll out into rotis.Heat a non-stick tawa. 
  6. Place each roti on it cook for half a minute. Flip, drizzle a little oil all around and flip again. 
  7. Drizzle some more oil all around and shallow-fry till evenly golden on both the sides. 
  8. Serve hot.
