Masala Cheese Toast

Servings :Makes 4 toasts (4 toast )

Ingredients :

For The Masala Topping
1 1/2 tbsp oil
1/4 cup finely chopped onions
1/2 tsp garlic (lehsun) paste
1/2 cup finely chopped mixed vegetables (cabbage , cauliflower , carrot and french beans)
1/4 cup boiled , peeled and mashed potatoes
1/2 tsp chilli powder
1/2 tsp lemon juice
2 tbsp finely chopped coriander (dhania)
salt to taste

Other Ingredients
4 whole wheat bread slices
4 tsp butter for spreading
4 tbsp grated processed cheese

For Serving
tomato ketchup

Method :

For the masala topping
For the masala toppingHeat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 1 minute.
Add the mixed vegetables and sauté on a medium flame for 2 minutes.
Add the potatoes, chilli powder, lemon juice, coriander and salt, mix well and cook on a medium flame for 1 minute. Keep aside.

How to proceed
How to proceedDivide the topping into 4 equal portions and keep aside.Spread a little butter on all the 4 bread slices and place them on a clean, dry surface with the buttered side facing upwards.
Spread a portion of the topping and 1 tbsp of cheese on each buttered bread slice and bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
Serve immediately with tomato ketchup.
