Macaroni Hot Pot

Preparation Time: 10 mins
Cooking Time: 15 mins
Baking Time: 25 Minutes
Baking Temperature: 200.C
Makes 4 servings
Ingredients
  • 4 tbsp butter
  • 3/4 cup onion rings
  • 1 1/2 cups capsicum rings
  • 1 tbsp crushed or grated garlic (lehsun)
  • 8 to 9 medium tomatoes , blanched and chopped
  • 2 tsp chilli powder
  • 4 cups cooked macaroni
  • 1 large can baked beans
  • 1/4 cup tomato ketchup
  • 1 tsp sugar
  • salt to taste
  • 1 cup grated cooking cheese for topping
Method
  1. Heat the butter in a deep pan, add the onions and sauté on a medium flame for 2 to 3 minutes, while stirring continuously.
  2. Add the capsicum, mix well gently and sauté on a medium flame for 5 minutes, while stirring continuously.
  3. Remove a few onion and capsicum rings and keep aside for garnishing.
  4. Add the garlic, tomatoes and chilli powder, mix well and cook on a medium flame for 5 minutes, while stirring continuously.
  5. Add the macaroni, beans, tomato ketchup, sugar and salt, toss gently and cover and cook on a slow flame for another 2 to 3 minutes.
  6. Remove from the flame, sprinkle the cheese evenly over it and garnished with sautéed onion and capsicum rings.
  7. Cover and bake in pre-heated oven at 200. C for 20 minutes or till cheese melts. Serve hot.
