For the crepes
- 1/3 cup cornflour
- 1/3 cup whole wheat flour or plain flour
- 1/3 cup low fat milk
- 1/3 cup water
- a pinch of salt
- 2 tsp melted butter or ghee or oil
- 6 apples
- 3 tbsp sugar
- 2 tsp lemon juice
- 1 tsp cornflour
- 1/2 tsp cinnamon (dalchini) powder
- 3/4 cup orange juice
- 1 tbsp orange squash
- 1 tsp sugar
- 2 tsp levelled, cornflour
- 1/2 tsp lemon juice
For the crepes, mix all the ingredients into a batter.
- Spread 1 tablespoon of the batter on a non-stick frying pan and cook on both sides with a little oil.
- Repeat for the remaining batter.
- For the stuffing, cut the apples into slices.
- Mix 3/4 teacup of water with the sugar and lemon juice. Add the apple slices and cook until soft.
- Sprinkle the cornflour and cook for 1/2 minute.
- Finally, sprinkle the cinnamon powder.
- For the sauce, mix the orange juice, orange squash, sugar and cornflour and cook until thick. Allow to cool.
- Add the lemon juice.
- To proceed, fill the warm stuffing into the crepes.
- Pour the orange sauce on top and serve.
