Green Peas Skin Soup

Preparation Time: 10 mins
Cooking Time: 20 mins
Makes 4 servings
Ingredients
  • 2 tsp low-fat butter
  • 1/4 cup chopped onions
  • 3 cups skin of green peas
  • 2 tbsp green peas
  • 1 1/4 cups low-fat milk (99.7% fat-free)
  • salt and to taste
Method
  1. Heat the butter in a deep non-stick pan, add the onions and sauté for a minute.
  2. Add the green peas skin and green peas, mix well and cook on a medium flame for 3 to 4 minutes.
  3. Add the milk and ¼ cup of water, mix well and pressure cook for 1 minute.
  4. Allow the steam to escape before opening the lid.
  5. Blend in a mixer till smooth.
  6. Strain using a strainer or a muslin cloth and transfer back to the same pan.
  7. Add the salt and pepper, mix well and bring to boil. Serve hot.
