Heat 3-4 tbsp of oil. Once the oil is well heated, add 1 tbsp of ginger and garlic, 31/2 tbsp of soya sauce, 1 tbsp of green chilli sauce, 1 tbsp of brown Chinese chilli sauce.
Swirl the ginger and garlic in the sauces.
Add 7-8 deseeded split green chillies and one onion chopped into four cubes. Stir well together.
Add the chicken, 1 tsp of salt, a bit of black pepper, 1/2 tbsp soya sauce.
Keep stirring for the heat to get into the chicken.
Add some capsicum, green chillies and some lighter green chillies on top. Toss them together
