Paneer and Pumpkin Sandwich

Servings :Makes 4 servings

Ingredients :

1/2 cup roasted and finely chopped pumpkin
1/2 cup mashed paneer (cottage cheese)
1/2 cup boiled and crushed green peas
salt and freshly ground black pepper powder to taste
2 tsp roasted cumin seeds (jeera) powder
1/4 cup finely chopped canned pineapple
a few chopped basil leaves
8 bread slices
16 to 20 tender spinach (palak) leaves

For The Garnish
finely chooped spring onions

For Serving
green chutney

Method :

Combine all the ingredients in a bowl, mix well and keep aside.Place the bread slices on dry plate and place some fresh crisp tender or baby spinach leaves on it.Spread a thick layer of filling evenly on it and arrange few spinach leaves and cover it with bread slice.Cut into triangle, garnish with spring onions and serve immediately with green chutney.
