Cooking Time: 60 min.
Serves 4 to 6.
Ingredients
- 2 cups yam (suran) cubes
- 2 cups cucumber cubes
- 2 cups potato cubes
- 1/2 cup peanuts
- 1 tbsp ghee
- salt to taste
- 3/4 cup coconut
- 3 green chillies, chopped
- 1 tsp grated ginger (adrak)
- 1 tsp lemon juice
- salt to taste
- 1 cup curds (dahi)
- 1 cup fried potato wedges
- Coconut Chutney
- 2 tbsp chopped coriander (dhania)
- Combine the yam, cucumber, potato, peanut, ghee and salt in a handi.
- Add 4 cups of water and simmer till the vegetables are well cooked.
- Add half the coconut chutney and mix well.
- How to proceed
- Pour some of the stew in individual bowls, top with some curds and chutney and sprinkle some potato straws on top. Serve immediately.
