Lemon Muffins

Preparation Time: 5 mins
Baking Time: 40 to 45 minutes
Baking Temperature: 180°C (360°F)
Makes 15 muffins
Ingredients
  • 1 1/2 tbsp lemon juice
  • 1 tsp lemon rind
  • 2 cups plain flour (maida)
  • 1 1/2 cups soft butter
  • 1 1/4 cups castor sugar
  • 3 eggs
  • 1/2 tsp vanilla essence
  • 2 tbsp milk
  • 1/2 tsp baking powder
Method
  1. Sieve the plain flour and baking powder together and keep aside.
  2. Combine the butter and castor sugar in a deep bowl and beat with help of an electric beater for 2 to 3 minutes.
  3. Add 1 egg at a time and beat for 30 seconds each.
  4. Add the vanilla essence, lemon juice, lemon rind and milk and mix well.
  5. Finally fold in the flour and baking powder mixture and mix gently with a spatula.
  6. Pour into muffin moulds and bake in a pre-heated oven at 180°c (360°f) for 30 to 35 minutes.
  7. Cool and store in an airtight container.
