Apple Crepes with Orange Sauce

Preparation Time: 15 min.
Cooking Time: 30 min.
Serves 6.
Ingredients
For the crepes
  • 1/3 cup cornflour
  • 1/3 cup whole wheat flour or plain flour
  • 1/3 cup low fat milk
  • 1/3 cup water
  • a pinch of salt
For the cooking
  • 2 tsp melted butter or ghee or oil
For the stuffing
  • 6 apples
  • 3 tbsp sugar
  • 2 tsp lemon juice
  • 1 tsp cornflour
  • 1/2 tsp cinnamon (dalchini) powder
For the orange sauce
  • 3/4 cup orange juice
  • 1 tbsp orange squash
  • 1 tsp sugar
  • 2 tsp levelled, cornflour
  • 1/2 tsp lemon juice
Method
For the crepes, mix all the ingredients into a batter.
  1. Spread 1 tablespoon of the batter on a non-stick frying pan and cook on both sides with a little oil.
  2. Repeat for the remaining batter.
  3. For the stuffing, cut the apples into slices.
  4. Mix 3/4 teacup of water with the sugar and lemon juice. Add the apple slices and cook until soft.
  5. Sprinkle the cornflour and cook for 1/2 minute.
  6. Finally, sprinkle the cinnamon powder.
  7. For the sauce, mix the orange juice, orange squash, sugar and cornflour and cook until thick. Allow to cool.
  8. Add the lemon juice.
  9. To proceed, fill the warm stuffing into the crepes.
  10. Pour the orange sauce on top and serve.
