Minty Cucumber Cooler

Servings :Makes 4 glasses

Ingredients :

1/2 cup chopped mint leaves (phudina)
3 cups chopped cucumber
1 1/2 cups low-fat curds (dahi)
salt to taste

For Serving
1/2 cup crushed ice

For The Garnish
4 tbsp finely chopped cucumber

Method :

Combine the cucumber along with ½ cup of water in a deep pan and cook on a medium flame till it turns soft (approx. 4 to 5 minutes). Keep aside to cool.Once cooled, combine the cucumber (with the remaining water) and mint leaves in a mixer and blend till smooth.Transfer the mixture in a deep bowl, add the curds and salt, mix well and keep aside.Place some crushed ice in 4 individual glasses and pour equal quantities of the juice over it. Serve immediately garnished with cucumber.
