Ingredients :
1 tbsp chopped garlic (lehsun)
2 cups sliced ladies finger (bhindi)
3/4 cup sliced onions
2 tbsp oil
2 slit green chillies
1/2 tsp cumin seeds (jeera)
1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/2 tsp dried mango powder (amchur)
1/2 tsp garam masala
a pinch of asafoetida (hing)
salt to taste
For The Garnish
1 tbsp finely chopped coriander (dhania)
Method :
Heat the oil in a deep non-stick pan and add the cumin seeds.
When the seeds crackle, add the garlic and green chillies and sauté on a medium flame for a few seconds.
Add the onions and sauté on a medium flame for 2 minutes.
Add the chilli powder, turmeric powder, coriander powder, dry mango powder, garam masala, asafoetida and salt, mix well and cook on a medium flame for a few seconds.
Add the bhindi, mix gently and cook on a medium flame for 10 minutes ,while tossing it occasionally.
Serve hot garnished with coriander.
