Zucchini, Bell Pepper and Sprouted Moong Salad

Ingredients :

1/4 cup finely chopped zucchini (unpeeled)
1/4 cup finely chopped red capsicum
1/4 cup finely chopped yellow capsicum
1/4 cup finely chopped green capsicum
2 cups parboiled sprouted moong (whole green gram)
3/4 cup chopped apple (unpeeled and deseeded)
1 tbsp olive oil
2 tsp lemon juice
salt and to taste

Method :

Combine all the ingredients in a deep bowl and toss well.
Serve immediately.
