Paushtic Parathas

Servings :Makes 15 parathas.

Ingredients :

1 cup finely chopped spinach (palak)
1/4 cup grated carrot
1 1/2 cups whole wheat flour (gehun ka atta)
1/4 cup besan (bengal gram flour)
4 tbsp curds
2 tsp green chilli paste
1 tsp oil
salt to taste
whole wheat flour (gehun ka atta) for rolling
3 3/4 tsp oil for cooking

For Serving
fresh curd

Method :

Combine all the ingredients in a bowl and knead into a semi-soft dough using enough water.
Divide the dough into 15 equal portions.Roll out each portion into a 100 mm. (4”) diameter thick circle using a little wheat flour for rolling.
Fold into half to make a semi-circle and again fold into half to make a 100 mm. (4”) length triangular paratha.
Heat a non-stick tava (griddle) and cook it, using ¼ tsp of oil, till brown spots appear on both the sides.
Repeat steps 3 to 5 to make 14 more parathas.Serve hot with fresh curds.
