Kale, Masoor Veg Antioxidant Salad

Ingredients :

1/4 cup soaked and cooked masoor (whole red lentil)
1/2 cup kale leaves , torn into pieces
1/2 cup coloured capsicum cubes
1/4 cup chopped mushrooms (khumbh)
1/4 cup cucumber cubes
1/4 cup red cabbage cubes
1/4 cup bean sprouts
1/4 cup sliced carrot
2 tbsp carrot juliennes
2 tbsp chopped spring onions whites and greens
1 tbsp crumbled feta cheese

To Be Mixed Into A Dressing
1/4 tsp grated garlic (lehsun)
1/2 tsp chopped onions
1/4 tsp dried mixed herbs
1 tbsp olive oil
1 tsp lemon juice
1/2 tsp honey
sea salt (khada namak) to taste

Method :

It can be taken to work in a lunch box with a dressing in a separate small container.
Just before eating, mix the dressing and toss well.
