Broccoli Broth

Servings :Makes 4 servings

Ingredients :

1 cup broccoli florets
1 tsp olive oil
1/2 cup thinly sliced onions
1/2 tsp finely chopped garlic (lehsun)
1/2 cup thinly sliced carrots
2 tbsp finely chopped celery (ajmoda)
salt and freshly ground black pepper (kalimirch) to taste

Method :

Heat the olive oil in a deep non-stick pan, add the onions, garlic, carrots and celery and sauté on amedium flame for 2 to 3 minutes.Add the broccoli, salt and 2½ cups of hot water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.Add the pepper and mix well.Serve hot.
