Soya Poha

Servings :Makes 4 servings

Ingredients :

1 1/4 cups soya granules
2 tsp oil
1 tsp mustard seeds ( rai / sarson)
5 to 6 curry leaves (kadi patta)
1/4 tsp asafoetida (hing)
1/2 cup sliced onions
1/4 cup boiled green peas
1 tsp finely chopped green chillies
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1 tbsp finely chopped coriander (dhania)
2 tsp lemon juice
salt to taste

For The Garnish
2 tbsp finely chopped coriander (dhania)

Method :

Soak the soya granules in 2 cups of warm water for 30 minutes. Drain and squeeze well. Keep aside.Heat the oil in a deep non-stick pan and add the mustard seeds.When the seeds crackle, add the curry leaves, asafoetida and onions and sauté on a medium flame for 2 minutes.Add the soya granules, green peas, green chillies, turmeric powder, chilli powder, coriander, lemon juice and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.Serve immediately garnished with coriander.
