Mixed Vegetable Uttapa

Servings :Makes 28 mini uttapas

Ingredients :

2 cups readymade dosa batter
1/2 cup finely chopped cabbage
1/4 cup grated cauliflower
1/4 cup finely chopped onions
1/4 cup finely chopped capsicum
1/4 cup boiled and chopped beetroot
a pinch of sugar
1/2 tsp chilli powder
salt to taste

Method :

Combine all the ingredients in a deep bowl and mix well.Heat a non-stick mini uttapa pan, pour small spoonfuls of the batter in each of the 7 uttapa moulds and spread in a circular motion to make a 75 mm. (3\") diameter circle.Cook the uttapas till they turn golden brown in colour from both the sides.
Repeat steps 2 and 3 to make 21 more uttapas in 3 more batches.Serve immediately.
