Infuse the shrimp with salt, white pepper powder, sesame oil, sugar, potato starch and set aside.
Make small roundels of the dough and flatten them into discs with a blunt Chinese chopper. Divide the above mixture into small quantities and put them on the dough. Then start pleating from one end to another leaving a slight mound in the center
Layer the base of a bamboo basket with parchment paper and grease it slightly. Place the dim sums on it and steam for 4 minutes.
