Sticky Rice Pudding

Preparation Time: 20 mins
Cooking Time: 30 mins
Makes 4 serving
Ingredients
  • 1 cup sticky rice
  • 5 to 6 tbsp brown sugar
  • 300 to 400 ml. coconut milk
  • 2 tsp butter
  • canned mixed fruits drained and cut into small pieces (pineapple , papaya , apple)
  • 10 to 15 pistachios , sliced
For The Garnish
  • Chopped mixed nuts
Method
  1. Wash the rice and soak for 30 minutes.
  2. In a deep pan add water and bring to a boil, add the rice, when the rice is cooked, drain and keep aside.
  3. In a non-stick pan heat butter,add the chopped fruits and toss. Keep aside.
  4. In a pan add half of the coconut milk and cooked rice, stir and mix well, then add the remaining coconut milk and cook till it evaporates.
  5. Add brown sugar and cook till the sugar dissolves.
How to proceed
  1. In a serving plate spread cooked rice, top with some pistachios, then spread the tossed fruits over it.
  2. Serve garnished with some mixed nuts.
