Festive Chawal

Preparation Time: 10 mins
Cooking Time: 20 mins
Makes 4 serving
Ingredients
  • 1 cup long grained rice (basmati)
  • 2 tsp ghee or coconut oil
  • 1 tbsp cumin seeds (jeera)
  • 1 to 2 bay leaves
  • 1 stick cinnamon (dalchini)
  • salt to taste
  • 1/4 cup pistachios
  • 1/2 cup medjool dates (khajur) , diced
  • 1/2 cup frozen green peas
  • 2 cups water
Method
  1. Wash and rinse the rice 3 to 4 times, drain and then keep aside.
  2. Heat the ghee or oil in a saucepan over medium high heat.
  3. Add the cumin seeds, bay leaves and cinnamon. Fry for 1/2 a minute.
  4. Add the salt, pistachios, and dates and saute.
  5. Add the green peas and water, mix well.
  6. Increase the heat to high, and bring the water to a full boil.
  7. Reduce the heat to medium high and cook for 5-7 minutes or until you see air bubbles form in the rice.
  8. Cover with a tight fitting lid, and simmer for 6-8 minutes or until the rice is tender and the water is fully absorbed.
  9. Turn off the heat.
  10. Fluff with a fork and serve immediately.
