Curried Beans with Buttered Rice

Preparation Time: 15 mins
Cooking Time: 20 mins
Makes 4 servings
Ingredients
For The Buttered Rice
  • 1 cup uncooked long grained rice (basmati)
  • 2 tbsp butter
  • salt to taste
For The Beans
  • 1 large can (450 grams) baked beans
  • 1/2 cup finely chopped onions
  • 1 tbsp finely chopped garlic (lehsun)
  • 1 tsp curry powder
  • 1/2 tsp chilli powder
  • 1/3 cup tomato ketchup
  • 1 tbsp butter
  • salt to taste
Method
For the buttered rice
  1. Put the rice and salt in a glass bowl and add 21/2 cups of water.
  2. Microwave on high for about 14 to 15 minutes or until cooked, stirring in-between after about 7 minutes. Each grain of the cooked rice should be separate.
  3. Put the butter in another glass bowl and microwave on high for about 30 seconds.
  4. Add the cooked rice and mix well.
  5. Microwave on high for about 30 seconds.
For the beans
  1. Put the butter in a glass bowl and microwave on high for about 20 seconds.
  2. Add the onions, crushed garlic and microwave on high for about 1 minute, stirring once in-between after 30 seconds.
  3. Add the curry powder and chilli powder and microwave on high for 30 seconds.
  4. Add the baked beans, tomato ketchup and salt and microwave on high for 2 1/2 to 3 minutes stirring in-between after every 30 seconds.
  5. Serve hot with buttered rice.
