- French bread 1
- Olive oil 2 tablespoons
- Garlic cloves,finely chopped 10-12
- Walnuts,toasted 2 tablespoons
- Mushrooms,finely chopped 1 cup
- Raisins 2 tablespoons
- Parsley a few sprigs
- Parmesan cheese as required
- Extra virgin olive oil 100 millilitres
- Preheat oven at 180° C. Cut the French bread into long slices and toast till they become golden brown.
- Heat olive oil in a non-stick pan.
- Add garlic to the pan and sauté till fragrant.
- Chop walnuts.
- Add mushrooms to the pan and cook on a high heat.
- Roughly chop raisins.
- When mushrooms turn light brown, add raisins and walnuts and mix.
- Finely chop parsley and add to the mushroom mixture.
- Rub a garlic clove on each bread slice, place them on a plate.
- Drizzle extra virgin olive oil and toast them in the preheated oven till crisp.
- Grate some parmesan cheese over the toasted bread slices.
- Cover the bread slices with the mushroom mixture.
- Grate some more parmesan cheese over the mushroom mixture and serve immediately.
